YELLOW SQUASH CASSEROLE | |
2 c. cooked squash (fresh) or use 4 cans canned yellow squash 1/2 stick butter 2 eggs 1 tsp. salt 1/2 tsp. pepper 1 c. chopped onions 1 c. shredded sharp cheese 1 c. milk 1 1/2 to 2 c. saltine cracker crumbs Cook squash and onions on top of stove until tender. Drain a LITTLE of the liquid from the squash, if you use canned squash. Add all other ingredients to squash, mixing well. Place mixture into 9 x 13 x 2 inch dish and bake at 375 degrees for 45 to 60 minutes. Should be golden brown on the top. Delicious! (Southern Recipe) |
