APRICOT CREAM CHEESE DELIGHT 
1 (6 oz.) pkg. apricot Jello (can use peach)
1 (#2) can crushed pineapple
3/4 c. sugar
1 (8 oz.) pkg. cream cheese, softened
2 sm. jars strained apricot baby food
1 lg. Cool Whip
3/4 c. finely chopped nuts (opt.)

Heat pineapple, gelatin and sugar together until it simmers, add cheese, apricot puree and cook, stirring until cheese is melted. Cool mixture in refrigerator until mixture mounds from spoon. Fold in Cool Whip and nuts. Place in refrigerator until mixture sets.
