APRICOT - CREAM CHEESE - NUT
BREAD
 
2 boxes commercial nut bread mix or your own favorite nut bread recipe

1. To the commercial mixes I add 6-8 ounce dried apricots and 6-8 ounce pecan halves (or walnuts) after having completed specified direction on the box. Set aside.

2. Cream together 12 ounces cream cheese, 1 tablespoon freshly grated orange rind, 1 egg and 1/4 cup orange juice.

3. Fill bottom third of 9 x 5 inch loaf pan with batter. Spread cream cheese mixture next. Add layer of batter mixture on top of the cream cheese. Be careful not to fill pan to the brine; fill only 3/4 full.

4. Bake as specified for the nut bread. A "doneness" test will not reveal a clean knife, but bread should spring back to the finger touch.
