APPLE DUMPLINGS
PASTRY:

2 c. flour
1 tsp. salt
2 tbsp. powdered sugar
1/3 c. butter
1/3 c. vegetable oil
1 egg yolk plus milk to make 1/4 c. liquid

Sift dry ingredients. Cut in shortening as for pie crust. Add liquid and stir to make a ball of dough. Roll pastry and cut into 6" squares.

FILLING:

6 good sized tart cooking apples
1/2 c. sugar
1/2 tsp. cinnamon
2 tbsp. butter

Peel and core apples. Place one apple in center of each square of pastry. Mix spice in sugar and with butter, distribute so that you have an equal amount in the hole of each apple. Bring up points of square and squeeze together until apple is totally covered and pastry adheres.

SYRUP:

1 c. sugar
1/2 tsp. cinnamon
1/4 c. butter
2 c. water

Mix the above ingredients over low heat to make a syrup. Pour over the dumplings which have been placed in a 2" deep baking dish. Bake at 375 degrees for 5 minutes. Reduce heat to 325 degrees and bake 45 minutes if apples are small, 90 minutes if apples are large. Serve warm. Apples may cut in half and smaller and more dumplings can be made.
