SOUTHERN RICE 
Vegetable cooking spray
1 c. sliced celery
3/4 c. sliced green onion
3/4 c. chopped green pepper
2 3/4 c. chicken broth
1 tsp. poultry seasoning
1/2 tsp. salt
1/8 tsp. pepper
1 1/2 c. long grain rice, uncooked
1/4 c. chopped pecans, toasted

Coat a large, non-stick skillet with cooking spray. Place over medium high heat until hot, add celery, green onions, and green peppers, saute until crisp tender. Stir in broth and next 3 ingredients, bring to a boil. Spoon rice into shallow 2 quart baking dish, add hot broth mixture, cover and bake at 350 degrees for 30 minutes or until rice is tender and liquid is absorbed. Sprinkle with pecans. Yield: 6.
