ZUCCHINI CASSEROLE 
1 c. rice, uncooked
Layer of fresh tomatoes
1 lb. zucchini
1 onion
2 (6 oz.) cans tomato paste
2 c. water
2 tsp. basil
1/2 tsp. pepper
1 1/2 tsp. salt
1 lb. hamburger
1/4 lb. mozzarella cheese
1/4 lb. cheddar cheese

Cook rice until done. Put in bottom of 9 x 13 pan. Top with layer of fresh tomatoes. Slice onion and zucchini and fry in butter until brown. Spread over tomatoes. Fry hamburger, add tomato paste, water, spices and cook awhile. Pour on top of zucchini. Top with cheeses and bake at 350 degrees for 30 minutes.
