BANANA BRAN MUFFINS 
1 c. flour
3 tbsp. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1 c. whole bran
1 c. mashed ripe banana
1/4 c. milk
1 egg
2 tbsp. salad oil or melted shortening

Sift together flour, sugar, baking powder, and salt. Stir in whole bran. Beat together remaining ingredients. Pour banana mixture all at once into dry ingredients, stirring just to moisten.

Fill greased muffin tins 2/3 full. Bake at 400 degrees for 20-25 minutes. Yield: about 10 muffins.
