SHRIMP AND CHEESE QUICHE 
1 c. Swiss cheese, grated
1 lb. shrimp, raw
Fresh mushrooms
1/3 c. onion, minced
2 c. cream, whipping or light
1/8 tsp. red pepper
1/2 tsp. salt
4 eggs
1 (9") pie shell

Bake pie shell at 450 degrees for 8 minutes. Saute shrimp, onion, salt, pepper and 1/2 cup mushrooms. Mix eggs and cream together, blending well. Place shrimp mixture in bottom of pie shell. Cheese may be added before or on the top of shrimp.

Pour cream and egg mixture over top. Garnish with sliced mushrooms. Bake at 450 degrees for 15 minutes. Baking for 30 minutes longer at 300 degrees. Let stand 10 minutes before cutting. Serve in wedges.
