SWEET POTATO PIE 
2 lbs. sweet potatoes
6 egg yolks
3 egg whites
2 c. sugar
2 tsp. nutmeg
5-oz. can evaporated milk
1/2 lb. butter
1/4 tsp. vanilla extract
2 (8-inch) unbaked pie shells

Cook sweet potatoes in boiling water to a soft doneness. Remove peel while hot, and place potatoes in a mixer bowl. Add butter, and whip until thoroughly mashed.

Add egg yolks and whites, sugar, nutmeg, milk and vanilla, and blend thoroughly. Pour evenly into pie shells.

Bake in 375 degree oven for 1 hour or until done.
