SQUASH CASSEROLE 
6 med. squash, sliced
1 onion, chopped
1 c. diced cheese
1 can cream of chicken soup
1 c. sour cream or 1 c. lowfat plain yogurt
Salt and pepper
Pepperidge Farm dressing

Stew squash, drain. Mash and mix with remaining ingredients. Layer squash mixture and Pepperidge Farm dressing alternately. Bake 45 minutes at 350 degrees.
