6 med. zucchini squash
2 tbsp. butter
2 tbsp. sour cream
1/2 c. grated cheese
Salt and pepper to taste
1/4 c. fresh bacon bits (optional)
1/4 c. chopped onions (optional)

Wash and slice zucchini squash. Place in medium casserole dish. Add chopped onions if you wish. Top with butter and salt and pepper. (Do not add any water.)

Microwave for 10 to 15 minutes or until squash is tender. Carefully stir in grated cheese and sour cream. Microwave 1 or 2 minutes or until cheese melts. Top with fresh bacon bits.

(This tastes best when made with home grown squash -- we also use yellow straight neck squash in it sometimes.)
