DIJON PORK CHOPS 
4 center cut pork chops
1/2 cup Dijon mustard
1 cup bread crumbs
1/2 cup chopped fresh parsley
1/2 tsp. each - garlic powder, salt, pepper (season to taste)
1 tbsp. Greek seasoning (Local restaurant brand is best)
1/4 cup Parmesan/Romano grated cheese

In a bowl, combine bread crumbs, chopped parsley, salt, pepper, garlic powder, and Greek seasoning; mix together well. Spread Dijon mustard on both sides of each pork chop, then cover both sides with bread crumb mixture.

Place pork chops in a baking dish, covering the dish loosely with aluminum foil; this keeps the chops moist.

Bake at 350°F for 40-45 minutes (depending on thickness of chops). Then, remove the aluminum foil. Sprinkle the top of each pork chop with a tablespoon of the grated Parmesan/Romano cheese. Continue to bake uncovered for another 10 minutes or until cheese has melted.
