APPLE CRUMB PIE 
1/2 c. sugar
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. grated lemon rind
1 tbsp. softened butter
6-8 greening or other tart pie apples, pared and slices
Pie shell for single crusted pie

CRUMB TOPPING:

1/2 c. firmly packed brown sugar
1/4 c. sugar
1 c. all purpose flour
1/4 tsp. salt
1/2 c. butter

Blend sugar, salt, spices, lemon rind and butter in large mixing bowl. Toss apples in mixture. Arrange in pie plate. Place crumb topping ingredients in separate mixing bowl; blend with pastry blender to form coarse crumbs. Spoon topping over apples. Place strip of foil over the rim. Bake at 425 degrees for 15 minutes. Reset over temperature control to 350 degrees and bake 40 minutes or until apples are tender. When topping begins to brown, cover with foil. Remove to cooling rack.
