BEET CARROT BREAD 
1 1/2 c. sugar
1 c. oil
3 egg yolks
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1 c. grated carrots
1 c. grated raw peeled beets
1 c. chopped nuts
3 well beaten egg whites

Beat sugar, oil, egg yolks and vanilla well.

Add dry ingredients, beat well.

Add carrots, beets and nuts, beat until mixed.

Fold in beaten egg whites.

Bake in two 9 x 5 x 2 greased pans at 350 degrees 1 hour 10 minutes.
