WHOOPIE PIES 
1 stick butter
1 c. sugar
2 eggs
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
4 rounded tbsp. unsweetened cocoa
1 c. milk
1 tbsp. vinegar
1 tsp. vanilla

Cream butter and sugar. Combine flour and other dry ingredients in separate bowl. Combine milk with vinegar. Alternately add flour and sour milk mixes to butter mix. Add vanilla. Drop on waxed paper lined cookie sheets.

Be sure they are similar in size as two make 1 pie. Bake 10 minutes at 350 degrees in middle rack of oven. Remove and cool when done. Make sandwich and wrap pies individually. Makes about 26 pies.

FILLING:

1/3 c. Crisco shortening
1/3 c. butter, softened
2 c. icing sugar
2 egg whites, beaten
1 tsp. vanilla

Mix first 3 ingredients and blend well. Add beaten egg whites and vanilla and beat at high speed until it increases in volume.
