PEANUT BUTTER COOKIES 
1/2 c. vegetable shortening
1/2 c. peanut butter
1 c. sugar
2 eggs
1 tsp. vanilla
1 3/4 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
Vegetable cooking spray

Combine shortening, peanut butter and sugar in a medium bowl. Beat until fluffy. Add eggs, beating well. Stir in vanilla.

Combine flour, salt, soda and baking powder. Gradually add to creamed mixture.

Shape dough into 1 inch balls, place 2 inches apart on cookie sheets sprayed with cooking spray. Flatten with bottom of glass.

Bake cookies at 375 degrees for 6-10 minutes. Cool 1 minute, remove to wire racks. Makes about 4 dozen.
