ITALIAN STYLE MEATLOAF 
1/4 c. oil
1 lb. ground pork
8 sprigs parsley, finely chopped
4 slices dry bread, soaked in water and squeezed
3/4 c. grated Romano cheese
1/2tsp. pepper
1 lb. ground beef
Garlic
4 eggs
Salt to taste
4 hard cooked eggs

Mix all ingredients except hard cooked eggs in bowl. Grease a loaf pan. Shape half the meat into an oblong or oval shape in the pan. Arrange hard cooked eggs lengthwise down the center. Oil your hands and cover eggs completely with remaining meat. Smooth meat with oiled hands; bake at 375 degrees for 1 hour or until meat is browned. Serve with Mashed Potatoes Romano.
