OAT BRAN MUFFINS - REDUCE
CHOLESTEROL
 
2 1/4 c. oat bran
1/4 c. brown sugar
1/2 c. chopped walnuts
1/2 c. raisins
2 tsp. baking powder
1/2 tsp. salt
3/4 c. non-fat dry milk powder
1 1/2 tsp. ground ginger
1/4 tsp. black pepper
3 egg whites
1/2 c. honey
2 tbsp. vegetable oil
3/4 c. warm water

Combine first 9 ingredients. Combine remaining ingredients and add to the bran mixture. Mix until just blended. Let stand 10 minutes. Fill greased muffin tins or papers to the top. Bake in preheated 375 degree oven for 15 minutes or until brown and slightly firm to touch. Makes 8 to 12 muffins.
