ITALIAN TOAST COOKIES 
1 c. shortening
1 c. sugar
3 c. flour
1 heaping tsp. baking powder
1/8 tsp. salt
4 eggs
1 tsp. vanilla

Cream shortening in a bowl; gradually add sugar. Sift flour, baking powder and salt together in a bowl and set aside. Beat eggs well. Add dry ingredients and eggs alternately to cream mixture. Mix in vanilla. Shape in loaves and put on greased pans. Bake at 350 degrees for 15 to 20 minutes. Slice while warm and toast.
