BAKED CHICKEN WITH HERBS 
2 1/2 - 3 lb. broiler-fryer chicken
2 tbsp. butter
2 tbsp. olive or vegetable oil
1/2 c. finely chopped onion
1/4 c. lemon juice
2 tbsp. Lea & Perrins Worcestershire sauce
1/2 tsp. dried basil leaves
1/4 tsp. dried marjoram leaves
1/4 tsp. dried oregano leaves
2 lg. cloves garlic, finely chopped

Cut chicken into pieces; cut each breast half into halves and remove skin. Heat butter and oil in rectangular pan, 13"x9"x2", in 375 degree oven until butter is melted. Stir in remaining ingredients except chicken. Place chicken, meaty sides down in pan, turning to coat with herb mixture. Cook uncovered 30 minutes. Turn chicken; cook until thickest pieces are done, about 30 minutes longer.
