Arrange in 9 x 13 inch baking dish.
Combine and pour over chicken: 1 tsp. grated lemon rind 2 tbsp. lemon juice 1/2 tsp. salt 1/4 tsp. basil 1/4 tsp. oregano
Bake at 325 degrees for 1 1/4 hours (uncovered). Serve with hot cooked rice. Or bake at 250 degrees for 2 1/2 to 3 hours for Sunday dinner.
Thick Mushroom Sauce: Saute 1/4 to 1/2 cup sliced mushrooms and 1 tablespoon finely chopped onion in 4 tablespoons butter. Blend in 4 tablespoons flour and 1/4 teaspoon salt, cooking and stirring until bubbly. Using wire whisk to prevent lumps, stir in 1 cup milk. Cook just until smooth and thickened. Makes slightly over 1 cup.
