PASTRY PUFFS 
1 stick butter
1 c. water
1 c. flour
4 eggs

Bring butter and water to boil in medium saucepan. Reduce heat and stir in flour until it forms a ball. Remove from heat and stir in eggs until mixture is glossy. Drop by teaspoonfuls onto ungreased baking sheet. (Use only 2 teaspoons as they puff up!) Bake at 400 degrees for 25 minutes or until golden. Let cool, slice into top, if necessary, remove inside fibers. Stuff with favorite filling (ex: ham salad, tuna salad, crab meat, etc.)

These are amazing and look so professional. Can be filled with pudding to make mini eclairs.
