BANANA NUT BREAD 
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped nuts
1 egg
3/4 c. firmly packed brown sugar
1 tbsp. vinegar
1/2 c. undiluted evaporated milk
1 c. mashed ripe bananas
1/4 c. melted butter

Sift flour, baking powder, soda and salt together. Stir in nuts. Beat eggs. Add sugar and beat light and creamy. Stir vinegar into canned milk. Add milk, bananas and butter to egg mixture. Stir liquid ingredients into flour mixture until dry ingredients are moistened. Pour into buttered loaf pan (8 1/2 x 4 1/2 x 2 1/2 inch). Bake in moderate oven 350 degrees for about 1 hour. Allow to cool, and store about 24 hours before serving.
