SODA SCONES 
3 c. sifted all-purpose flour
1/2 tsp. baking soda
2 tsp. cream of tartar
1/2 c. butter, softened
1 tbsp. sugar
1/4 c. milk
1/4 c. water
1 egg, beaten

Sift flour, soda, and cream of tartar into large bowl. Work in butter with fingers until of fine meal consistency. Add sugar; blend thoroughly. Combine milk and water; stir into flour mixture to form medium-soft dough. Press dough lightly into 10 x 8-inch rectangle on lightly floured surface. Cut into 1 x 3-inch triangles.

Brush tops with egg; place on baking sheet. Bake in preheated 400 degree oven for 20 minutes or until lightly browned. Serve hot with butter and jam.
