NO EGG LEMON SUPREME PIE 
1 1/2 c. sugar
1/8 tsp. salt
1/2 c. cornstarch
Grated rind of 1 lemon
1 1/2 c. boiling water
2 cartons egg scramblers
1/2 c. lemon juice
1 tbsp. butter
9" baked pie shell

Combine sugar, salt, cornstarch and lemon rind in saucepan. Stir in boiling water. Cook stirring constantly until thickened. Blend a small amount of hot mixture with scramblers; add to mixture in pan. Blend in lemon juice. Continue cooking over low heat, stirring constantly, until mixture just comes to a boil. Remove from heat. Add butter. Pour into baked pie shell. Cool. Garnish with whipped topping if desired.
