APPLESAUCE-OATMEAL MUFFINS | |
1/3 c. shortening 1/2 c. packed brown sugar 2 eggs (or 4 egg whites for low-cholesterol) 1 1/2 c. quick oatmeal, uncooked 1 1/4 c. all-purpose flour 1 1/2 tsp. ground cinnamon 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 1 c. applesauce 1 c. raisins In large bowl with fork cream shortening and sugar until blended. Add eggs, beat until fairly smooth. Add 2 tablespoons water and remaining ingredients - except raisins. Stir until just moistened (batter will be lumpy). Fold in raisins. Spoon into greased muffin cups and bake at 400 degrees for 20-25 minutes. Cool 5 minutes in pan before removing. |
