DATE PINWHEEL COOKIES 
2 1/4 c. chopped dates
1 c. sugar
1 c. water
1 c. chopped nuts
1/2 tsp. salt
1 c. shortening
2 c. brown sugar
3 eggs well beaten
4 c. flour
1/2 tsp. baking powder

Combine dates, sugar and water, cook until thick. Add nuts and let cool. Cream shortening, add brown sugar and eggs. Add rest of ingredients together and mix well. Chill thoroughly. Divide dough in half and roll about 1/4 inch thick. Spread each with date mix and roll as jelly roll. Chill overnight. Slice and bake at 400 degrees.
