DATE PINWHEELS COOKIES 
1/2 c. butter
1/2 c. light brown sugar, packed
3/4 c. granulated sugar
1/2 tsp. vanilla
1 egg
2 c. sifted flour
1/2 tsp. salt
1/4 tsp. baking soda
7 1/4 oz. pitted dates, cut in sm. pieces
1 c. chopped nuts

Cream butter. Add brown sugar, 1/2 cup granulated sugar, vanilla and egg. Beat until light. Add sifted dry ingredients. Chill dough until firm enough to roll.

To make filling: Bring cut up dates to boil with remaining 1/4 cup granulated sugar and 1/3 cup water. Simmer for 5 minutes, stirring often, add nuts and cool.

Halve dough, roll each half on floured waxed paper into 9 x 12 inch rectangle. Spread with filling, roll up tightly from wide end. Wrap in plastic wrap and chill overnight. Slice 1/8 inch thick and bake. Bake at 375 degrees for 10 minutes. 6 dozen.
