DATE PINWHEEL COOKIES 
2 1/4 c. dates (12 oz. carton)
1 c. sugar
1 c. water
1 c. chopped nuts
1 c. shortening
2 c. brown sugar
3 eggs, well beaten
4 c. sifted flour
1/2 tsp. salt
1 tsp. baking powder

Combine dates, sugar, water and nuts in medium saucepan. Cook 10 minutes and cool. Cream shortening. Add brown sugar and beat well. Add eggs and beat well. Add flour (sifted with salt and soda) gradually. Dough tends to be sticky so you can add a little more flour and/or refrigerate.

Divide into 4 portions and roll out 1/4" thick. Spread each roll with 1/4 of date filling. Roll lengthwise. Wrap in wax paper and store in freezer. Slice while frozen and bake for 10 minutes at 400 degrees. Baking time varies with thickness of slice. Should be just barely browned on top.

This recipe keeps well in freezer. Nice for unexpected company.
