MATILDA'S OLD FASHIONED
PINEAPPLE CREAM PIE
 
Need 1 baked pie crust.

Mix: 1 c. sugar

Beat:

Mix part of 1 cup hot water with the sugar and flour. Mix rest of water into beaten yolks, then add the sugar and flour mixture. Cook over double boiler, stir constantly. Cook until thick.

Add 1 cup pineapple (crushed or small sliced) and butter size of walnut. Continue cooking until thick, then cool. Beat 3 egg whites until stiff, fold into cooled cooked mixture. Add to pie shell. Serve with whip cream. Delicious.
