OLD FASHIONED PINEAPPLE CAKE 
1/2 c. butter
1 1/2 c. sugar
3 eggs
3/4 c. buttermilk
2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. vanilla
1/2 c. crushed pineapple

Cream butter and sugar until creamy. Add eggs one at a time and mix after each addition. Sift dry ingredients together. Add alternately with buttermilk, mixing after each addition. Stir in vanilila and pineapple. Bake at 350 degrees 30 to 35 minutes or until done. Makes two (9 inch) layers.

Filling for pineapple cake:

1 c. sugar
1/2 tsp. salt
1 c. pineapple (crushed)
1 tbsp. flour
1 egg, beaten
1/2 c. pineapple juice
1 tbsp. butter

Drain pineapple, saving juice. Put all ingredients in saucepan, cook on medium heat until thickened. Spread on cake.
