CARROT CAKE 
2 c. sugar
1 1/2 c. oil
4 eggs (whole, one at a time

Mix the above items together.

2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 jars baby food carrots (Jr. size 7 3/4 oz.)
1/2 c. nuts (mix last)

Grease 9x13 pan. Bake at 300 degrees for 50 minutes or until done.

FROSTING FOR CARROT CAKE:

1 stick butter
1 (8 oz.) cream cheese
1 box powdered sugar
1 tsp. vanilla
1/2 c. chopped nuts

Use 1/2 recipe for sheet cake.
