HERMAN STARTER NO. 2 
2 c. all purpose flour
1/4 c. granulated sugar
2 c. warm water
1 envelope yeast

Mix flour, water, sugar and yeast together in plastic or glass container and let stand overnight in a warm place with a lid, but do not cover tightly. Refrigerate, covered, but stir each day. On the fifth day, feed Herman:

1 c. flour
1 c. milk
1/2 c. sugar

The starter should be fed the same ingredients on the tenth day, after taking out the two cups of starter to be used in baking. On the tenth day you can bake.

Measure 1 cup of Herman to give to a friend. This will leave 2 cups for use in a recipe and another cup to continue to feed for another recipe in 10 more days. Remember, the tenth day and the first are the same.

If Herman is not used on the tenth day, add 1 teaspoon sugar and repeat every 10 days until you do use some.
