ENGLISH LEMON CAKE | |
1 c. softened, unsalted sweet butter 1 c. sugar 2 eggs 1 1/4 c. flour 1 tsp. baking powder 1/2 tsp. salt 1/2 c. milk LEMON GLAZE: 1/3 c. sugar 1/4 c. squeezed lemon juice 2 tsp. grated lemon peel Cream butter and sugar in large mixer bowl. Add eggs, one at a time, beating well after each addition. Mix dry ingredients, add alternately with milk to butter mixture. Pour batter into greased 9"x5"x3" loaf pan. Bake 45 minutes to an hour in 350 degree oven, until toothpick comes out clean. Make lemon glaze by combining sugar, squeezed lemon juice and lemon peel. Heat just to boiling in a saucepan. Pour lemon glaze over cake immediately after removing from oven. Cool in pan. |
