PINWHEEL MEAT LOAF | |
Preparation time: 20 minutes. Baking time: 1 hour and 15 minutes. Oven temperature: 350 degrees. Microwave cooking: see next recipe. Beef loaf with a swirl of spinach makes a nourishing family dinner or good eating for company or a church supper. Money saving! For 4 servings you will need. 1 1/2 lbs. ground lean beef 1/2 c. fine dry bread crumbs 1 egg, beaten 1 1/4 tsp. salt, divided 1/8 tsp. pepper 1 (10 oz.) pkg. frozen chopped spinach, defrosted, well drained 3/4 c. shredded Mozzarella cheese, divided 3 tbsp. grated Parmesan cheese 1/2 tsp. dried oregano or marjoram or rosemary leaves 1 clove garlic, minced 1/4 c. ketchup, divided Chopped parsley 1. Combine ground beef, bread crumbs, egg, 1 teaspoon salt, pepper, and 2 tablespoons ketchup, mixing lightly. 2. Combine spinach, 1/2 cup Mozzarella cheese, Parmesan cheese, herb, remaining 1/4 teaspoon salt and the garlic. 3. Pat out meat mixture to a 14 x 18 inch rectangle on waxed paper. Spread spinach filling over beef to 3/4 inch from edges. 4. Roll up from short end, jelly-roll fashion, to enclose filling and to form a pinwheel loaf. Press beef mixture around filling at both ends. 5. Place loaf, seam side down, on rack in roasting pan. 6. Bake at 350 degrees for 1 hour. 7. Spread remaining 2 tablespoons ketchup over meat. Bake 15 minutes longer. 8. Sprinkle with remaining Mozzarella cheese and parsley. Serve hot or chill and serve cold. Variation: Sliced cooked carrots or green peas can be used as filling for meat loaf, in place of spinach. |
