PINWHEEL MEAT LOAF 
Preparation time: 20 minutes. Baking time: 1 hour and 15 minutes. Oven temperature: 350 degrees. Microwave cooking: see next recipe. Beef loaf with a swirl of spinach makes a nourishing family dinner or good eating for company or a church supper. Money saving!

For 4 servings you will need.

1 1/2 lbs. ground lean beef
1/2 c. fine dry bread crumbs
1 egg, beaten
1 1/4 tsp. salt, divided
1/8 tsp. pepper
1 (10 oz.) pkg. frozen chopped spinach, defrosted, well drained
3/4 c. shredded Mozzarella cheese, divided
3 tbsp. grated Parmesan cheese
1/2 tsp. dried oregano or marjoram or rosemary leaves
1 clove garlic, minced
1/4 c. ketchup, divided
Chopped parsley

1. Combine ground beef, bread crumbs, egg, 1 teaspoon salt, pepper, and 2 tablespoons ketchup, mixing lightly.

2. Combine spinach, 1/2 cup Mozzarella cheese, Parmesan cheese, herb, remaining 1/4 teaspoon salt and the garlic.

3. Pat out meat mixture to a 14 x 18 inch rectangle on waxed paper. Spread spinach filling over beef to 3/4 inch from edges.

4. Roll up from short end, jelly-roll fashion, to enclose filling and to form a pinwheel loaf. Press beef mixture around filling at both ends.

5. Place loaf, seam side down, on rack in roasting pan.

6. Bake at 350 degrees for 1 hour.

7. Spread remaining 2 tablespoons ketchup over meat. Bake 15 minutes longer.

8. Sprinkle with remaining Mozzarella cheese and parsley. Serve hot or chill and serve cold.

Variation: Sliced cooked carrots or green peas can be used as filling for meat loaf, in place of spinach.

Since microwave ovens vary in power, you may need to adjust your cooking time.
