ARKANSAS PECAN AND PINEAPPLE
CAKE
 
2 eggs
20 oz. can crushed pineapple (undrained)
2 c. flour
1 c. sugar
1 c. brown sugar
2 tsp. baking soda
1 c. pecans (or walnuts)

In large mixing bowl, beat eggs until light and fluffy. Add the pineapple and blend. Add flour, sugar, and baking soda. Mix by hand. Stir in nuts. Spread batter in ungreased 13 x 9 x 2 baking dish. Bake at 350 degrees for approximately 30 minutes or until toothpick comes out clean.

CREAM CHEESE FROSTING:

3 to 4 oz. cream cheese
1/4 c. butter (softened)
1 tsp. vanilla

Gradually, add 2 cups powdered sugar and 1/2 teaspoon ginger. Spread on cooled cake. A very moist cake, similar to carrot cake.
