ANTIPASTO 
1 lettuce, washed and dried
1 (10 oz.) can tuna fish
8 slices salami
8 slices ham
8 black olives
1 tbsp. capers
4 tomatoes, quartered
1 (14 oz.) can artichoke hearts, drained
8 radishes
1 tbsp. chopped parsley
Italian dressing

Place lettuce leaves on a large platter. Arrange the tomatoes, tuna fish, artichoke hearts, salami, ham, and radishes on the lettuce. Sprinkle the olives, parsley, and capers over it all. Pour the Italian dressing over the antipasto and allow to marinate for 1/2 hour before serving.

ITALIAN DRESSING:

1/2 c. olive oil
3 anchovy fillets, mashed
2 tbsp. lemon juice
Salt and pepper to taste

Combine all the ingredients and mix well.
