LECHE FLAN 
6 egg yolks
1 c. sugar
2 c. evaporated milk (warm)
1/4 tsp. lemon or lime rind (optional)
1 tsp. vanilla

Warm milk in double boiler for 5 minutes or microwave on high for 1 minute. Set aside. Beat egg yolks with fork. Add the sugar, milk and flavoring. Pour into 1 quart mold. Place this in large pan 1/3 filled with water. Bake at 300 degrees for about 1 hour or until mixture becomes firm. Cool before removing from mold. If desired, line mold with hardened caramel syrup before pouring in mixture for baking.

Caramelized Sugar:
1 c. sugar
1/2 c. hot water

Melt sugar in hot water and boil on low heat until syrupy. Pour in mold and let cool to harden.

Since microwave ovens vary in power, you may need to adjust your cooking time.
