6 egg yolks 1 c. sugar 2 c. evaporated milk (warm) 1/4 tsp. lemon or lime rind (optional) 1 tsp. vanilla Warm milk in double boiler for 5 minutes or microwave on high for 1 minute. Set aside. Beat egg yolks with fork. Add the sugar, milk and flavoring. Pour into 1 quart mold. Place this in large pan 1/3 filled with water. Bake at 300 degrees for about 1 hour or until mixture becomes firm. Cool before removing from mold. If desired, line mold with hardened caramel syrup before pouring in mixture for baking. Caramelized Sugar: 1 c. sugar 1/2 c. hot water Melt sugar in hot water and boil on low heat until syrupy. Pour in mold and let cool to harden. |
