LECHE FLAN 
6 egg yolks
3/4 c. sugar
1 (13 oz.) canned milk
1 tsp. lemon rind or vanilla for flavoring
3/4 c. brown sugar + 1/4 c. water (to be caramelized)

Beat egg yolks slightly and blend in sugar, milk and flavoring. Pour into mold lined with caramelized sugar. Place this in a bigger pan 1/2 filled with water and bake until mixture becomes firm in a 300 degree oven for 2 hours. Cool and unmold before serving.

To caramelize sugar dissolve water and sugar, cook over moderate heat until sugar caramelizes.

This is my favorite recipe, almost sinful. Once you try it you'll love it, so will everyone else who tries it.
