LECHE FLAN 
6 eggs
2 c. sugar
2 cans evaporated milk
2 tsp. vanilla or lemon extract
Sugar for caramelizing

Separate egg yolks. Beat egg whites until fluffy. Mix in the yolks. Alternate pouring in milk and sugar. Add extract. Caramelize some sugar (a few tablespoons) in a loaf pan. Pour in egg mixture. Put loaf pan in another pan with some water. Bake at 350 degrees for an hour or so until set.
