LECHE FLAN 
8 egg yolks
1 c. sugar
2 c. fresh milk
1 lemon rind or vanilla for flavoring
Caramelized sugar

Scald the milk in a double boiler for 15 minutes. Blend the egg yolks with the sugar, milk and flavoring. Pour into mold lined with caramelized sugar. Place this in a bigger pan half filled with water and steam until the mixture becomes firm. Cool off before removing from mold.

To Caramelize: Dissolve 1/2 cup sugar over moderate heat until caramelized. Line a suitable mold with the syrup evenly.
