BUBBE'S HONEY CAKE | |
3/4 c. strong cold coffee 1 c. orange juice 3/4 c. oil 8 oz. honey 3 eggs, mixed first 1 tbsp. vanilla 3 1/2 c. unbleached white flour 2 heaping tsp. baking powder 1 tsp. baking soda 3/4 c. sugar 1 c. raisins Mix coffee, orange juice, oil, honey, eggs and vanilla in a mixing bowl. Combine all dry ingredients. Add dry ingredients to wet and mix well. Blend in raisins. Grease a tube pan and bake in a 350 degrees preheated oven for about 45 minutes or until browned and set. Honey cakes are usually eaten on the Jewish New Year (Rosh Hashanah) to signify our hope for a "sweet New Year." |
