BAKED BEANS | |
1 lb. dry beans 1/2 tsp. baking soda 1/2 lb. fat salt pork 1 tsp. mustard 2 tsp. brown sugar 1/2 c. tomato juice 2 tbsp. molasses 2 tbsp. onions Variations: Maple sugar or honey for molasses. Wash and sort beans. Cover with water, soak overnight. Parboil in boiling water with soda until skins crack. Drain. Put in bean pot with all seasonings, pork at the bottom. Cover with boiling water and bake at 300 degrees F. for 6 hours. Add water as needed. |
