TURKEY CHILI | |
1 lb. ground turkey or extra lean ground beef 1/2 c. chopped onion 1/2 c. chopped green pepper 1 clove garlic, minced 3/4 c. dried kidney beans, cooked 1 c. water 3 med. tomatoes, peeled and chopped 1 (6 oz.) can tomato paste 1 tsp. chili powder 1/2 tsp. dried oregano leaves 1/2 tsp. ground cumin 1/8 tsp. ground red pepper In large heavy pot, brown turkey; pour off any excess fat. Add onion, green pepper and garlic; cook 2 minutes, stirring occasionally. Add beans, water, tomatoes, tomato paste, chili powder, oregano, cumin and red pepper; cover. Simmer for 1 1/2 hours, stirring occasionally. Serve hot with crackers. 242 calories, 172 mg. sodium, 34 mg. cholesterol, 8 gm. fat. |
