CARROT SALAD WITH ROASTED
PEANUTS
 
4 med. carrots
1 lg. tomato
1 sm. onion, chopped
2 tbsp. chopped cilantro
1 sm. chopped hot green pepper
Salt to taste
1 tsp. sugar
Roasted peanuts without the husk
Juice of 1/2 lemon

Grate the carrots. Cut the tomato into small pieces. Add the onions, pepper, cilantro, and sugar. Toss everything together. Add salt, coarsely chopped peanuts and lemon juice just before serving.
