JUDY'S MINI CHEESECAKES 
2 (8 oz.) pkgs. cream cheese, room temp.
2 eggs
3/4 c. sugar
1 tbsp. lemon juice
1 tsp. vanilla
1 box vanilla wafers, or chocolate chip cookies
1 can blueberry or cherry pie filling

Beat cream cheese until smooth. Add eggs, sugar, lemon juice and vanilla, and beat until smooth. Preheat oven to 350 degrees. Line muffin pan with liners. Put vanilla wafers or chocolate chip cookies at bottom of each liner. Fill with mixture 3/4 of the way. Bake until set, about 15-18 minutes. When cool, top with pie filling, and put in deep dish with cover on. Refrigerate until ready to use. May be frozen without pie filling. Makes 1 1/2 dozen.
