PORK LOIN WITH SAUERKRAUT 
5 lb. loin of pork or fresh ham, trimmed of excess fat
Salt & pepper to taste
1 (29 oz.) can sauerkraut, rinsed & drained
1 (8 oz.) can tomato sauce
3/4 c. molasses
1/3 c. vinegar

Put pork on rack in a shallow baking pan. Bake in a slow oven, 325 degrees for 2 1/2 hours. Combine sauerkraut, tomato sauce, molasses and vinegar. Pour off excess fat from pork. Spread sauerkraut mixture over pork and bake 45 minutes, or until meat thermometer reads 180 degrees.
