CAJUN RED BEANS & RICE 
1 lb. pinto beans
1 (8 oz.) can tomato sauce
1/4 c. dried parsley
1 tbsp. salt
1 lb. smoked sausage, sliced 1/4" thick
1 med. onion, chopped
1 tsp. garlic powder
1 tsp. thyme
1 tsp. chili powder
3 qt. water
Cayenne pepper, to taste
Hot cooked rice

Presoak beans per package directions and drain. Combine all ingredients and bring to a boil in 3 quarts of water. Reduce heat, cover and let simmer until beans are tender. Approximately 2-2 1/2 hours. Serve over hot cooked rice with cornbread. Serves 6.
