IRISH SODA BREAD 
1 c. buttermilk
2 tbsp. butter

Heat until very warm (butter need not melt). 3 tbsp. sugar 1/2 tsp. salt 1/2 tsp. baking soda 1 pkg. yeast

Add to buttermilk/butter mixture. Beat all very well. Add enough flour to make a soft dough you can knead. Cover and let double in size. Punch down and knead on floured board gently 20 times. Form a smooth round ball. Place on a greased cookie sheet and press into a 7 inch circle. Cover and let rise to double. Bake at 350 degrees for 30 minutes. (I like to pat it into 2 small bread tins.) Cover with aluminum foil so it won't burn during the last few minutes of baking.
