MAX'S SWISS ZUEPFE | |
2 pkg. yeast 1/2 c. water 1 tsp. sugar 1 stick butter (1/4 lb.) 2 c. warm milk 2 eggs Dissolve yeast in water with 1 teaspoon sugar. Melt butter in milk. Beat eggs and stir into milk and butter mix, then add to yeast mix. 1 tbsp. salt 4 tbsp. sugar Mix together flour, salt, and sugar. Mix in milk mixture and knead well. Let rise in greased pan, reversing dough so top is buttered; leave covered, in warm place, until doubled about 1 1/2 hours. Punch down; let rise again 30 minutes. Cut dough in quarters on floured surface. Cut each section in 3 even, long strips. Butter hands, then braid dough in twist, tucking ends under. Place on greased sheets, glaze with one egg yolk mixed with 1 teaspoon cream or milk. Sprinkle with poppy or sesame seeds. Let rise 30 minutes. Bake at 375 degrees for 25 to 30 minutes. Makes 4 loaves, about 12 inches long. |
